Cranberry Desserts
BOUNCING BERRY ALERT! There are about 200 cranberries in every can of sauce.
There are about 440 cranberries in one pound, and about 4,400 in a gallon of juice.
Apple Cranberry Dumplings
four cups sliced apples
1 cup fresh or dried cranberries
Ingredients for Pastry:
3 cups flour
pinch of salt
1-1/2 cup shortening
1 egg
4 tablespoons water
1 tablespoon vinegar
Ingredients for Syrup:
1 cup sugar
2 cups water
3 tablespoons butter
1/2 teaspoon cinnamon
Directions: Make pastry. Roll out and cut in 8 squares.
Peel, core, and slice apples. Place apple slices and cranberries on square of pastry. Sprinkle with 1/4 cup sugar and a bit of cinnamon. Dot with butter.
Bring pastry up over apples to cover.
Repeat for remaining 7 squares. Place squares on large baking dish.
Combine ingredients for syrup and boil 3 minutes. Pour syrup around dumplings.
Bake in 375 degree oven for 45 minutes until golden brown.
Johnny's Apple Cranberry Dessert
4 cups sliced apples
1 cup dried cranberries
1 cup brown sugar (Depending on your sweet tooth, you may want to use less)
1/4 cup flour
1/4 teaspoon salt
1 cup water
1/2 teaspoon vinegar
2 tablespoons butter
1 teaspoon vanilla
cinnamon
Ingredients for biscuits: (If in a hurry, you can also use the Bisquick biscuit recipe on the box.)
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons shortening
1/2 cup milk
Mix together in saucepan: brown sugar, flour, and salt. Gradually stir in water and vinegar.
Cook over low heat until thick. Remove from heat and add butter and vanilla.
Place apples and cranberries in well-buttered pan and sprinkle with cinnamon. Pour sauce over apples.
Sift together flour, sugar, baking powder, and salt. Cut in shortening. Stir in milk. Drop on apples.
Bake at 400 degrees for 35 minutes.
